    Banana cakes turned out nice, however ganache ratios are off - way too runny even after a few hours in the fridge.

    Wonderful recipe. I make GF and make into a loaf and swirl the salted caramel in before cooking.
    Also I make a cinnamon butter and toast. It’s the best

    This is a great cake and I have made this several times now with it always being a winner. Here is what I have learnt. Do NOT double the recipe to make the two cakes. It takes longer of course but making the recipe twice gives a far better result. You get even size cakes and the cooking time for each cake is based on the one cake not checking two in the oven, letting out heat etc. Also do NOT double the ganache recipe, make two batches. They don't seem to set properly when doubled and have to be put in the freezer to thicken up. I don't make the caramel all the time and use the extra ganache between the two layers and a thicker outer layer than shown in the photo. Finally take your time, this is not a cake to make at 8:30 at night while watching Brokenwood !
