I made these chewy chocolate sandwich cookies and WOW… they’re honestly dangerous to have in the house. The cookies came out perfectly soft and chewy, with that warm ginger, cinnamon and mixed spice flavour that hits you first, then the deep cocoa kicks in. They smell like Christmas but taste like a deluxe chocolate biscuit.
The golden syrup gives them that perfect bendy–chewy texture, and the edges get just the right amount of crisp. I loved how simple the dough was to work with too — no crumbling, no drama, just smooth cookie magic.
And that filling? Unreal. The Whittaker’s 50% Dark Chocolate melts down with the cream into a silky ganache that sits between the cookies like a little chocolate cloud. Not too sweet, super rich, and it ties together the spices and cocoa perfectly.
Once assembled, they tasted like something you’d buy at a boutique bakery. I had to hide a few from myself because they’re that addictive.
If you like ginger, chocolate, or chewy cookies of any kind… make these. You won’t regret it (but your willpower definitely will).
