Preheat the oven to 190°C (170°C fan bake). Grease 4 ramekins with the butter.
Chop the chocolate roughly and melt it. Beat in the vanilla, liqueur (if using) and sugar. Beat in the egg yolks, one at a time, and then the flour. Mix until the mixture is quite stiff.
Beat the egg whites until stiff peaks form, then gently fold into the chocolate mixture.
Pour into the ramekins and bake for 10–12 minutes, until puffed up and well risen. The puddings will be gooey on the inside.
Dust with icing sugar and serve with whipped cream or vanilla ice-cream.
