Put all of the ingredients, except the chocolate and coating, in a food processor and mix until the mixture is very fine and a good sticky consistency, able to be rolled into balls.
Gently melt the chocolate in a glass bowl over a pot of simmering water.
Add the processed mixture to the chocolate and combine. Roll into balls and put in the fridge to cool. Roll in coconut or cocoa before serving, if desired.

To make the texture more interesting, you can add Craisins, toasted coconut, currants, chopped dried apricots or goji berries to the melted chocolate.
