Blondie Macadamia Cookies

Method

  1. Preheat oven to 180°C fan bake.
  2. Line a baking tray with baking paper.
  3. In a large mixing bowl, whisk together the caster sugar, brown sugar, and butter until smooth.
  4. Whisk in the egg and vanilla.
  5. Sift in flour and baking soda, then mix well to combine.
  6. Mix in Blondie Chocolate and macadamias, then chill the dough for at least 30 minutes.
  7. Spoon the mixture in approximately 1 ½ tablespoon portions, placing them ~5cm apart on the prepared baking tray.
  8. Bake in the oven for 12-15 minutes, or until the edges have started to barely brown.
  9. Remove from the oven and place one square of chocolate on top of each biscuit, allowing it to melt onto the biscuit.
  10. Cool the biscuits on a tray for ~5mins, then transfer to a cooling rack.
  11. Decoration – melt remaining Whittaker’s Blondie chocolate, drizzle over the cookies and sprinkle with remaining macadamias.

Note: If you do not have access to macadamias, feel free to omit from the recipe.
