Method
- In a small sauce pan, melt the butter. Sprinkle in corn flour. If you prefer a thicker hot chocolate, add another tablespoon of corn flour. Remember that the flour will continue to thicken with heat. Once the flour and butter are fully mixed, slowly pour in the milk. Whisk as much as possible. The corn flour will seem as if its curdling, just mix and it will turn into a smooth consistency. Let the mixture come to a slight simmer – do not let it boil, this will cause scorching and lead the milk to burn.
- Remove the pan from the heat and fold in the chocolate squares, sugar and cocoa powder. Once the chocolate has fully melted, add in the orange zest.
- If you prefer sweeter – add more sugar. If in the end the product is thicker than you prefer, mix in more warm milk.
- Ladle into mugs, top with cream and sprinkle with salt and orange zest.
