Method
Chocolate cupcakes
- Preheat the oven to 200°C. Line a muffin tray with paper cups.
- Whisk the eggs and the sugar in an electric mixer for at least 15 minutes or until the mix is white. Incorporate gently the flour and baking powder.
- Melt the butter and add to the mix.
- Melt the chocolate in a water bath (see page 26), then add to the mix. Add the orange juice and zest and mix thoroughly.
- Fill the paper cups about three-quarters full with the mixture, and bake for 8–10 minutes.
- Allow to cool.
Ganache
- In a pot, melt the butter and cream together, then pour over the chocolate. Mix well and allow to cool until firm.
- Once the cupcakes are cool, glaze with the chocolate ganache, and add gold leaves for that extra touch.
