Whittaker’s Chocolate Cupcakes

Method

Chocolate cupcakes 
  1. Preheat the oven to 200°C. Line a muffin tray with paper cups.
  2. Whisk the eggs and the sugar in an electric mixer for at least 15 minutes or until the mix is white. Incorporate gently the flour and baking powder.
  3. Melt the butter and add to the mix.
  4. Melt the chocolate in a water bath (see page 26), then add to the mix. Add the orange juice and zest and mix thoroughly.
  5. Fill the paper cups about three-quarters full with the mixture, and bake for 8–10 minutes.
  6. Allow to cool. 
Ganache 
  1. In a pot, melt the butter and cream together, then pour over the chocolate. Mix well and allow to cool until firm.
  2. Once the cupcakes are cool, glaze with the chocolate ganache, and add gold leaves for that extra touch.
